Woolworths' Funny Face Frittata Recipe

Even the fussiest eater will love these Funny Face Frittatas. So quick and easy to make, the kids can help! These mini frittatas are a great way to make vegies fun for kids as they’ll love decorating them to make funny faces. A tasty dinner or snack, and they’re the perfect size for lunchboxes. So if the kids are sick of eating the same old sandwich every day, mix it up with a Funny Face Frittata.

Makes 12 serves

Ingredients
6 eggs
1/2 cup milk
1 potato, coarsely grated
1 small carrot, coarsely grated
1 cup frozen peas
3/4 cup corn kernels
1 cup tasty cheese
Cherry tomatoes
Red capsicum
Green bullhorn
cucumber
Mini carrots
Radish

Method
  1. Ask mum or dad to preheat the oven to 180°c. Line each muffin hole with a paper case.
  2. To make the egg mixture, break eggs into a large jug and whisk together with milk.
  3. To make the veggie mixture, mix the potato, carrot, peas and corn in a bowl. Divide veggie mixture between paper cases. Then pour egg mixture over the top and sprinkle with cheese.
  4. Bake for 25 minutes until puffy and golden. Add veggies to make funny faces and cucumber or carrot strips for whiskers.
