So if the kids are sick of eating the same old sandwich every day, mix it up with a Funny Face Frittata. Makes 12 serves Ingredients 6 eggs 1/2 cup milk 1 potato, coarsely grated 1 small carrot, coarsely grated 1 cup frozen peas 3/4 cup corn kernels 1 cup tasty cheese Cherry tomatoes Red capsicum Green bullhorn cucumber Mini carrots Radish
- Ask mum or dad to preheat the oven to 180°c. Line each muffin hole with a paper case.
- To make the egg mixture, break eggs into a large jug and whisk together with milk.
- To make the veggie mixture, mix the potato, carrot, peas and corn in a bowl. Divide veggie mixture between paper cases. Then pour egg mixture over the top and sprinkle with cheese.
- Bake for 25 minutes until puffy and golden. Add veggies to make funny faces and cucumber or carrot strips for whiskers.
